DHABA MUTTON CURRY


INGREDIENT
800 Grms to 1 kgi meat
Ginger garlic paste 2 tbsp
1cup curd
4 fresh green chill
1/2 tsp Hing ,
1tsp Ghee
Hand free coriander leaf 
salt as taste

For gravy
3tbsp OIL
1tsp black paper
3 coves
1 bay leaf
1 inch cinemom
3 onion large

FOR MASALA
4 tsp coriander seed,
1 tsp mace
2 tsp black pepper
4 clove
5 green cardamom
1 1/2 inch cinnamon
salt
1 tsp ghee
1 tsp read masala

PROCESS (For marination)
In a large mixing bowl, add mutton, ginger garlic paste, curd, green chilli, red chilli powdeer, asafetida, cumin powder, coriander powder, salt, ghee, coriander leaves and mix well and keep it aside.

For Masala
In a pan add coriander seeds, cumin seeds, mace, black peppers, cloves,green cardamom, cinnamon stick, salt and dry roast then cool it down and then grind into a powder and keep it aside.



For Gravy
In a large pot, heat ghee and oil, add black cardamom, black pepper, clove, bay leaf, cinnamon.
Add onion and saute well
Add marinated mutton into the pot and mix well.

Add required water and prepare masala into the mutton, cover it with lid and cook till 5-6 whistle till the mutton is tender.
In a pan add ghee and prepared masala and mix well into a mutton.
Garnish with fresh coriander spring and serve hot with rice or roti.
