Malai Cake


Ingredients
To make Malai
  • 4 Cups full cream milk
  • 1/2 Cup Condensed Milk
  • Saffron a pinch
  • Cardamom 1/4 Tsp 
  • Pistachio slices 1 Tbsp

Method
  1. Combine milk and condensed milk.
  2. Add saffron and cardmom powder.
  3. Add pistachio slices.
  4. Cook on medium flame until it reduces to 2 /2.5 cups. 
  5. Switch off gas and refrigerate

INGREDIENTS 
To make Cake Batter
  • 1/3 Cup Melted Ghee/Butter/Oil
  • 1/4 Cup Condensed Milk
  • 1/3 Cup Curd (Should not be too sour)
  • 1 Cup Plain Flour
  • 1/2 Cup Ground Sugar
  • 1 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • Milk a little less than 1/2 Cup
  • Cardamom Powder 1/2 Tsp
(All ingredients should be at room temperature)


Methods
  1. Heat Kadhai for 10 Mins.
  2. Combine wet ingredients with (seived) dry ingredients 
  3. Add cardmom powder.
  4. Gently fold everything together.
  5. Grease cake tin with ghee/butter/oil.
  6. Pour Batter and tap to remove air bubbles.
  7. Put in preheated kadhai and bake for 45 mins at low flame.
  8. Remove and Cool down completely before unmoulding.
  9. Cut the top part of cake to even it out and prick holes
  10. Pour Chilled Malai
  11. Garnish with sliced Pistachios
  12. Slice and Serve.
